Country Breakfast Brunch Baked Potato Skillet

Potato Country Brunch Skillet Bake

Serves six and can be doubled for 12.  Use six oval rarebit or oven proof dishes

6 bacon strips or turkey sausage

6 cups frozen cubed hash brown potatoes

1 cup shredded cheddar cheese

¾ cup chopped green pepper

½ cup chopped onion

1 teaspoon salt

¼ teaspoon pepper

8 eggs

1 cup milk

Coat rarebit dishes with non-stick spray. In a skillet over medium heat, cook bacon or sausage until crisp. Remove bacon or sausage; crumble and set aside. Drain and reserve 2 tablespoons of drippings. Add potatoes, green pepper, onion, salt and pepper to drippings and place evenly in rarebit dishes. Sprinkle cheddar cheese over the top. Bake at 350 for 30-40 minutes, stirring occasionally, until potatoes are browned and tender about 15 minutes. Top with sour cream and a side of picante/salsa.  Garnish with chives, parsley and cherry tomatoes.
